Agave Nectar: The One-Ingredient Fix for a Vegan Bar

When I set out to make a vegan version of the Original bar, honey was the one ingredient that had to go. Everything else translated over easily. Finding its replacement took more thought than I expected.

Nutritionally, agave and honey are close cousins - both are mostly sugar, similar calories per tablespoon. Agave leans more heavily toward fructose, which is part of why it tastes a bit sweeter for the same amount used.

What actually sold me on it was texture and binding. Agave is thinner and pours more easily than honey, which made it work well as a one-to-one swap without having to re-engineer the whole recipe.

Agave nectar is only in the Vegan Bar. Every other bar uses honey instead.
