Here's what stood out to me when I actually looked at the numbers: one ounce of almonds gets you almost half your daily vitamin E, plus a decent hit of magnesium and fiber. I'm not a nutritionist, and I'm not going to pretend this bar is a multivitamin - but when almonds are one of your first ingredients, you're getting real nutrition, not just filler that tastes like something.

Paleo-wise, almonds were an easy yes. They're a tree nut, so there's no grain to avoid and no legume status to argue about - just almonds, the way people have eaten them for a very long time.

The bigger reason, honestly, is texture. A bar without real nuts doesn't hold together the same way, and it definitely doesn't have that crunch. That's why almonds have never left the recipe.
