A cacao nib is basically a cracked, roasted cacao bean - the same thing chocolate is made from, just before anyone adds sugar or milk to it. It's bitter, intense, and nothing like a chocolate chip.

I wanted the Triple C bar to have a real chocolate note without going the candy route, and this is how I got there - along with a little help from cayenne and coffee.
