Nearly 10 grams of fiber in an ounce is the highest number on this entire ingredient list. That gel-forming behavior is actually the same property responsible for a lot of that fiber content - it's a type that absorbs liquid and adds bulk as it moves through your body.
In a bar, chia seeds don't do much for flavor, and I'm not going to pretend they do. They're here for what they contribute nutritionally, and because their tiny size means they fit into every bite without changing the texture much.
