Coconut oil and coconut flakes come from the same fruit but do completely different jobs in this recipe. The oil binds things. The flakes are here for texture and a bit of toasted flavor.

I use unsweetened flakes only. Sweetened coconut is coated in added sugar, which defeats the point of a bar where honey is already doing the sweetening.
The fiber content surprised me a little when I looked it up - 4.6 grams per ounce is respectable for something people mostly think of as a garnish.
