Flax Seeds - Nutrition Facts & Why We Use Them
Flax seeds go into every bar whole, straight from the bag. I don't grind them. Some recipes call for ground flax, but I'd rather keep it as close to its natural form as possible - fewer steps, fewer processing choices, and one less thing to overthink. The seed itself is doing plenty of work already.

That fiber number is the real story here - 7.6 grams in a single ounce is a lot for any food, let alone something this small. Combined with the omega-3 content, flax does more nutritional work per gram than almost anything else in the recipe.
I don't love the flavor of flax on its own - it's a little grassy - but in small amounts mixed into everything else, it disappears into the background and just does its job.
