Why I Use Local, Gravity-Filtered Honey
Most honey you buy off a shelf has been heated and pushed through fine filters to make it pour smoothly and stay clear for a long shelf life. I use local honey that's gravity filtered instead - strained slowly by gravity rather than forced through a fine mesh, with minimal heating. It takes longer and it's less consistent-looking, but I'd rather have that than a jar of honey that tastes like plain sweetness and nothing else.

I'll be straight with you: honey isn't a superfood, and I'm not going to dress it up as one. Nutritionally, it's mostly sugar. What I actually care about with honey is flavor, not a health angle - and heavy processing strips a lot of that flavor out. Minimal heat means the honey keeps more of the floral, sometimes almost caramel-like notes that come from whatever the bees were working that season. You can genuinely taste the difference between that and a squeeze bottle of the clear stuff.
Honey is doing structural work here too, not just flavor work. It's sticky enough to act as one of the binders holding the bar together, working alongside the coconut oil - without that tackiness, the nuts and seeds would crumble apart instead of holding their shape once you slice it.
Honey is also a natural preservative. Its low moisture content and natural acidity make it a poor environment for bacteria and mold to grow in, which is a real part of why these bars stay shelf-stable for months without needing any artificial preservatives added.
It's also why my bars taste a little different from batch to batch. Local honey changes with the seasons depending on what's blooming, and I'd rather have that small bit of variation than a totally uniform, flavorless sweetener.
