Real Vanilla, Not the Lab-Made Kind
Most "vanilla flavor" you run into isn't from a vanilla bean at all. It's vanillin, a compound that can be synthesized to taste similar without ever touching a real plant. I use actual vanilla extract, made from real vanilla beans.
There's not much to say nutritionally about vanilla extract - the amount used per bar is a few drops, not a measurable serving. It's here purely for flavor, and specifically for a flavor that's a little rounder and more complex than what the synthetic version gives you.
It's a background note more than a headline one. You probably wouldn't notice it missing right away, but I would.
